Carousel is a restaurant set in the heart of Marylebone and culinary hub of emerging chef talent. Its changing guest chef line-up plays host to some of the world’s best up and coming talent – each cooking alongside Carousel’s co-founder and resident chef Ollie Templeton. For this residency meet food writer, food stylist, cook and general food obsessive, Rosie Birkett. Following the release of her book, A Lot On Her Plate (Hardie Grant), she’s hosting her very first London residency at Carousel from 28th April - 2nd May… and boy are we excited. Rosie regularly writes for magazines and newspapers including Olive, Grazia, The Guardian and The Independent and was recently tipped as a ‘Rising Star of 2015’ by The Observer. Rosie’s Carousel menu features some of her favourite dishes from the book, inspired by years as a food writer and hungry traveller. Cooking seasonally is at the heart of Rosie’s recipes, so ingredients including wild garlic, asparagus and borage take centre stage on the menu. Pig (she says it takes one to know one) and “really crackly” crackling are also things that Rosie loves to cook - and eat, of course - so her recipe for porchetta (a rolled Italian pork roast) is not to be missed – she will even share with you her secret to getting that crackling just right. Rosie will also be using the wonderful Cornish butcher Philip Warren, who she recently visited and wrote an acclaimed piece on for The Independent on Sunday.
