There’s nothing quite like experiencing a destination like a local, from the culture to the food, and that’s exactly what Intrepid Travel specialises in shared adventures amongst like-minded people.
Inspired by traditional cuisine, this culinary masterclass spotlights an endangered dish from New Orleans, traditional gumbo with filé powder – no longer widely-used – and teaches you how to cook it like a local. Considered one of the ‘oldest expressions of the dish’, traditional filé gumbo is made using the ground dried leaves of the sassafras tree – a technique created by the Choctaw people, later embraced by Cajun and Creole chefs.
Lesser-known due to changes in local cooking practices but still much-loved, the thick, silky and savoury stew is typical of hearty cooking in Louisiana – despite falling out of favour as modern tastes turned towards the okra-thickened gumbos of today. Good news that we’re celebrating it in this class!
Taking place at Food at 52 Cookery School, which has a homespun feel in keeping with Intrepid’s focus on authentic experiences, you’ll be guided by one of the kitchen’s professional chefs every step of the way. Afterwards, you’ll get to enjoy the dish and share your experience around the table with others, revelling in your worldly cuisine creation together.
There are multiple sessions, so pick a date that suits, while there are other endangered dishes in the series, so pick and mix, or do them all!
