Inspired by traditional cuisine, this culinary masterclass spotlights an endangered dish from Northern Philippines, traditional inanchila sticky rice, and teaches you how to cook it like a local. Made using endangered sticky rice, inanchila is a Filipino dessert made from pounded glutinous rice topped with latik (caramelised coconut cream) and formed into a tongue shape – ‘chila’ means ‘tongue’ in the Kalinga language.
Historically, the Philippines produced thousands of rice varieties, but due to a combination of over-tourism and changing agricultural practices, the dish has fallen away, contributing to an increasing loss of indigenous culture in the Philippines.
