There are so many noteworthy things about Sipsmith. For starters, they're the first distillery in London to get a licence in nearly 200 years. It’s the epitome of what the independent spirit craft should look like. The tour starts with a drink (which can be topped up throughout the evening, naturally), as you're regaled with a brief synopsis of Sipsmith and the history of gin in London. Then meet Prudence, the gorgeous 300-litre copper still, before being whisked off to The Princess Victoria for a three-course meal. It’s the refined drinker’s bliss. General admission.
